MANXPOWER 9 kg ABC dry powder fire extinguisher for restaurant kitchens

A portable extinguisher for Class A, B and C fires, ISI-marked to IS 15683:2018. Available in MAP 50% and MAP 90% powder. A common choice for stores, dining halls and electrical panels.

What fire safety equipment does a restaurant need?

A restaurant needs ISI-marked fire extinguishers (ABC type for general areas, water-based for dining areas), a fire blanket at every cooking line, a gas leak detector where LPG or PNG is used, smoke or heat detectors with a fire alarm system, and a hose reel for larger premises. The exact mix depends on kitchen size and layout.

THE RISK

One pan of hot oil can close a kitchen for good

A single overheated pan can start a grease fire that spreads to the exhaust duct, ceiling and storage within minutes. Restaurant kitchens combine open flames, hot oil, gas and electrical loads in a small space. Without the right equipment within reach, a minor flare-up becomes a closure, an insurance claim or a loss of life.

That is why detection and first-aid firefighting must be within arm’s reach, and why inspectors ask to see both during a fire NOC check.

Cooking oils and fats are classed as Class F fires under IS 2190:2024. Water makes a hot-oil fire worse, so kitchens need a fire blanket and the right extinguisher within reach of every cooking line. For commercial deep-fat fryers, your fire authority may also expect a Class F (wet chemical) extinguisher, so check this during your site assessment.IS 2190:2024

KNOW THE IGNITION SOURCES

What causes fires in restaurants and commercial kitchens?

The most common causes of restaurant fires are overheated cooking oil, leaking LPG lines, grease build-up in exhaust ducts, electrical overload, combustible storage and skipped maintenance. Most start in the cooking area and spread through grease, packaging and fabrics. Protection works best when you match equipment to each ignition source.

Electrical overload

Ovens, refrigerators, exhaust fans and extension boards on shared circuits overheat and spark.

LPG and gas lines

Cylinders, hoses and regulators wear out, and a small leak can build up unnoticed.

Fryers and hot oil

Overheated oil can ignite on its own. It needs a fire blanket, not water.

Dining and seating areas

Décor, curtains, furniture and tables hold combustibles close to guests.

Stores and packaging

Dry goods, cartons, cooking oil stock and paper packaging fuel a fast fire.

Grease and exhaust ducts

Grease inside hoods and ducts ignites from flames below and spreads fire upward.

Generator and cold-room equipment

Diesel sets, compressors and UPS units serving the kitchen add electrical and fuel risk.

Skipped maintenance

Expired extinguishers and untested alarms fail when needed, and fail inspections.

MATCH THE EQUIPMENT TO THE AREA

Which commercial kitchen fire protection does your kitchen need?

Commercial kitchen fire protection means matching equipment to each fire class in each zone. Use a fire blanket plus an ABC extinguisher on cooking lines, a gas detector near LPG, water-based extinguishers in dining areas, and CO₂ or ABC units near electrical rooms. Detectors and alarms cover the whole premises.

Fires are classed as A (ordinary solids such as wood and paper), B (flammable liquids), C (gases such as LPG), D (metals) and F (cooking oils and fats). Electrical equipment is not a separate class, so pick an extinguisher tested for live electrical use, such as CO₂. Always check the extinguisher label for the classes it covers.

Water-based extinguishers

9-litre, non-toxic units for dining areas, waiting areas and offices. A practical restaurant fire extinguisher for front-of-house.

ABC and CO₂ extinguishers

An ABC extinguisher is the standard restaurant kitchen fire extinguisher for stores and general areas, in a range of sizes up to 9 kg. CO₂ comes in 2 kg and 4.5 kg sizes, suits electrical rooms and generator areas, and leaves no residue.

Fire blankets

1 m × 2 m fire-retardant fiberglass blankets that smother cooking-line fires, pan fires and clothing fires. Wall-mountable and maintenance-free.

Standalone alarms

Smoke detectors, a gas detector and a CO detector that work without a control panel. Suited to cafes, dining areas and stores. A simple fire alarm for restaurant premises without a panel.

Conventional alarm systems

Panels up to 16 zones, plus smoke, heat and multi detectors, call points, hooters and strobe sirens. A complete fire alarm system for restaurants and multi-floor outlets.

Hose reel drums

First-aid hose reel drums with a 20 mm ISI-approved hose, for larger kitchens, banquet-adjacent areas and high-load floors.

Concealed sprinklers

Brass sprinklers hidden behind a chrome cover plate in false ceilings, rated at 68 °C. For dining halls, lobbies and food courts that need protection without visible fittings.

Gas detectors

LPG and natural gas monitoring for commercial kitchens, cloud kitchens and food courts. A gas leak detector for a commercial kitchen alerts staff before gas reaches a flammable level.

COMPLIANCE

Kitchen fire safety in India, made simple

Kitchen fire safety in India is guided by the National Building Construction Standards (NBCS) 2026, Indian Standards and state fire service rules. Restaurants typically need a valid fire NOC, working extinguishers and detection as per IS standards, and safe gas handling. Requirements differ by state, city and building type, so confirm them with your local authority.

An inspection rarely turns on whether you own equipment. It turns on whether the equipment is installed, marked, accessible and serviced. Extinguishers should be checked regularly (monthly visual checks are common practice) and serviced professionally at least once a year. We supply against the standards your inspector will actually cite.

Requirements and the NOC route vary by state and are enforced by local authorities. Confirm current requirements with your local fire authority before relying on this page.

Rules & regulations
Municipal eating house licenceRestaurants typically need a municipal eating house licence. Many cities check fire safety as part of the approval, and it may require a valid fire NOC.
Gas cylinder rulesStorage and handling of LPG cylinders in commercial premises are governed by the Gas Cylinder Rules. A gas detector gives early warning, but check storage limits with the authority.
NBCS 2026, Part F (Fire and Life Safety)The national reference for fire safety in buildings, including assembly buildings such as large restaurants, banquet halls and food courts. It replaced the previous edition of the National Building Code and is advisory, so your state’s adopted bye-laws and fire rules are what apply.
State fire NOCIssued by the State Fire Services Department, and depends on building size, use and local rules.
Indian Standards
IS 2190:2024Selection, installation and maintenance of portable and mobile fire extinguishers.
IS 15683:2018Portable fire extinguishers, performance and construction.
IS 2189:2026Selection, installation and maintenance of automatic fire detection and alarm systems.

ANSWERS

Restaurant and kitchen fire safety: frequently asked questions

Most kitchens need a mix. Use a fire blanket for pan and cooking-oil fires, and an ABC extinguisher for other kitchen fires and for stores. A 9-litre water-based extinguisher suits dining areas. Never use water on a hot oil fire. Choose ISI-marked units, and ask for a site assessment if unsure.

The number depends on floor area, layout and risk. IS 2190 sets travel distance and coverage guidance, and your local fire authority has the final say. As a practical rule, every cooking line, store, electrical room and exit route should have a unit within easy reach. A site survey gives the exact count.

In most Indian states, restaurants above a certain size, seating capacity or building height need a fire NOC from the state fire department. Small outlets may have lighter rules. The criteria differ by state and city, so confirm with your local fire authority before opening or renewing a licence.

If you use LPG or piped natural gas, a gas leak detector is strongly recommended. It warns staff of a leak before the gas reaches a flammable level. Install it as per the manufacturer’s guidance, usually near the cylinder or gas line, and test it regularly.

Check extinguishers visually on a regular schedule (monthly is common practice) for pressure, seals, damage and access. Get professional servicing at least once a year, refill immediately after any use, and follow IS 2190 for refill and pressure-testing intervals by extinguisher type. Keep dated service tags and records for inspections.
